Mamaw Gillit's Stuffed Bell Peppers
3 large bell peppers
1 1/2 lbs. ground meat
1/2 chopped onion
1 tsp. garlic
salt and pepper
1 can diced tomatoes
1 small can tomato sauce
1/4 cup ketchup
6 slices mozzarella cheese
Cut peppers down the middle and remove seeds and ribs. Place in a large pot of boiling water for about 5-7 minutes. Peppers should be soft and less bright green when they are ready.
Brown ground meat, onion, garlic, salt and pepper. Drain grease and add tomatoes, sauce, and ketchup. Simmer this on medium heat for 10-15 minutes to let the flavors meld together.
Place cooked peppers in a casserole dish and fill with meat mixture. Pour the extra meat and sauce around the peppers. Top each pepper half with one slice of cheese. Bake in a 350 degree oven for 30 minutes, or until it is bubbly and delicious.
Before the cheese was added and baked.
