Six Mile Granola
Bring this mixture to a boil in a small saucepan:
3 Tablespoons unsalted butter
1/2 cup brown sugar
1/2 cup honey
1 tsp. cinnamon
1 tsp. salt
2 tsp. vanilla (only mexican vanilla in my kitchen!)
In a large bowl, mix together:
4 cups rolled oats
1/2 cup wheat bran (this can be found in the bulk bins at Whole Foods, Central Market or Sprouts)
1/2 cup wheat germ (can be found in supermarkets on the cereal aisle)
2 cups of raw nuts (I used almonds and pecans, but cashews are actually in the original recipe)
1 1/2 cups sweetened coconut
Pour the liquid ingredients over the dry ingredients and toss to coat evenly.
Place the granola on 2 baking sheets and bake in a 250 degree oven for 1 and 1/2 hours, stopping every once in a while to turn with a spatula.
When the granola is nice and crunchy, toss in:
1/2 cup dried cherries (i used cranberries, any dried fruit could be used)

1/2 cup golden raisins (could be omitted or replaced with any other dried fruit)
Now enjoy this for breakfast... or dinner in our case! I love this layered with vanilla yogurt and mixed berries, but it is also delicious by the handful on the go! It may be easier to buy prepackaged granola, but not half as good. Give it a try!
