Spaghetti Squash Marinara
Serves 6 - 4 pts. per serving
1 medium spaghetti squash
1 lb. italian turkey sausage (I actually use Sprouts It. Chicken Sausage)
2 medium zuchinni, sliced
1 pkg. sliced mushrooms
1/2 onion, chopped
2 tsp. minced garlic
1 can diced tomatoes
1 small can tomato sauce
chopped fresh basil to taste
shredded parmesan
Poke spaghetti squash with a knife all over and place in the microwave. Cook for 5 minutes, turn over, 5 more minutes, turn over, then 5 more if needed. It will be squishy to the touch when it is cooked. Carefully remove it from the microwave and slice it open lengthwise. Allow to cool for a few minutes. Beware of the steam- it is really hot when you first open it! Shred the squash with a fork and place on plates.
Meanwhile, brown sausage in a large skillet with a little olive oil. Remove from pan and allow to drain on paper towels. Place zuchinni, mushrooms, onions, and garlic in the skillet and cook until almost completely done. Add sausage back into the pan and add the tomatoes, tomato sauce, and basil. Let simmer 10 minutes or so until sauce is well combined.
Top with sauce and shredded parmesan if desired. Enjoy!

thanks for the great idea. i am on the WW bandwagon too and just finished some spaghetti squash (from sprouts) for lunch. (are we twins??) i also wanted to know where you get all of your cute shirts done? i am looking for someplace local to do some shirts for me. thanks!
